What up folks (again, probably just Mom, if you aren’t busy haha).
Before I write what I was going to write- can I just mention how I just cracked my iPhone?!!! Was I being reckless? No. Was I on the move? no. MY EMPTY PLASTIC WATER CUP FELL ON IT FROM ABOUT AN INCH OR TWO ABOVE. Are you kidding me? This is ridiculous.
But whatever, I’m not going to let this send me into a case of the Mondays.
After a long week at the lake (no, not complaining) – which was filled with lots of outdoor exercise (wake surfing, paddle boarding, yoga, swimming), food (sadly quite a lack of organic most days), and causal drinks- then a weekend in Keystone, CO for the Wine/Jazz festival (also not complaining)- which was filled with lots of wine and good food- I am so happy to be back in my apartment in Denver with my kitchen, my schedule, and my (even if its shitty) gym!
I am a planner. When I want to be spontaneous, I plan for it. Its weird. Don’t ask.
I can finally organize my life and get back in the groove of sweat, eat, work, socialize- in whatever way I can balance them!

The wine festival was fun- we were given 5 food tickets so I was on the hunt for some good eats! Luckily I found procuitto-wrapped melon and this lettuce wrapped ahi!!

Drinking. Yes yes I know it’s not good for you. I’ve got it. But I take care of myself in basically every other sector, soo I let myself be 22. But I just found this fantastic drink, called TrulySparkling which is only 100cal, 1g sugar, 4carbs, and 5% abv. It is delicious, comes in 4 flavors (blood orange and grapefruit are my favorite!) and has all the wonders of getting a low sugar mixed well drink with the convince of a beer. Such a great buy, and super refreshing.
After the fun wine fest, I came home to “ice cream day”. Since I had just had a whole lot of sugar from wine, I decided I had to make my own with no added sugars in order to partake in the celebration of my favorite dessert!
Protein Shake Disguised as (n)Ice Cream
- 2 frozen bananas
- 1 ripe avocado
- 1.5 cap-fuls (maybe that’s 1 tsp?) vanilla extract
- Pinch of salt
- 3 tbsp collagen
Put it all in a food processor, freeze, and then bring it out later with an ice cream scoop and top!

For dinner I was feeling lazy, but forced myself to pickup some things at the store.
When I got home, MY OVEN WASN’T WORKING!!! I tried for 15 minutes to turn it on, to no avail. This is devastating for someone who loves to cook AND just bought ingredients!
I was planning on a portobello pizza, of sorts- requiring an oven. But I improvised- I put a little water in a stove top pan, and covered it with aluminum. Thankfully it worked, it heated up the meal and melted the cheese.
It was super easy- one portobello mushroom, topped with tomato sauce (I used Pacific brand organic crushed tomato sauce), a little organic goat cheese, and organic spinach! After the heat I added a drizzle of olive oil and pepper. Yum yum! This would also be great with some meat or a fried egg (because everything is better with one, duh).

I know, I know you aren’t learning anything groundbreaking in this post, for that I’m sorry! But I can share that I just opened the best can of coconut milk I ever opened to make a matcha latte this morning. Unsweetened Organic “Simple” Coconut milk from Native Forest- No Guar! It was perrrrfect. I tossed a little coconut milk, water, 2.5 inches of banana(? haha), ice, and unsweetened matcha for a great iced latte with perfect consistency! Try it out 😀
Finally, I took some photos of my brunch as I took it (I had a snack before working out at 8:45, then I ate around 10:45/11 after a grocery store walk). I know a lot of my diet consists of spinach, cauliflower rice, and a fried egg- but these things really work for me and ARE SO EASY TO USE in a pinch! I always always always have them on hand.
STEPS TO AN AWESOME BREAKFAST BOWL:
- Steamed cauliflower “rice” & spinach
- Half of an avocado & salsa
- Fried egg and a sprinkle of goat cheese
- Sauerkraut (hell yea probiotics!!) & pepper
THEN Mix it all up (if you’re like me) and ENJOY THAT SUCKER, knowing that you’re filling up on organic veggies, good fats, protein, and YUM.
