Anyone else feeling the heat? I know I am! This is my first full summer in Denver, so I am still getting used to the constant 90+ degree days and random summer rain! Without the ocean, this San Diegan is finding herself overheated. So, I’ve got some lighter, more refreshing things for you to try.
I don’t usually have smoothies in the morning, but in the heat it just sounds and tastes so damn good. And as I usually need caffeine in the mornings, I’ve paired them together in a Green Matcha Smoothie! I really don’t have anything against coffee in moderation (and I need/love coffee), but sometimes its good to give yourself a break (as goes with everything).
Green Matcha Morning
1 Handful of Spinach
1.5 tsp unsweetened* Matcha powder
1/2 Frozen Banana
3 tbsp coconut milk
2 tbsp collagen (or sub plant based protein powder to make this vegan)
1/4 tsp vanilla extract
1 Handful of Ice
1/4 cup water
Pinch of sea salt, optional (I recommend especially if this is after a workout!)
1 tbsp cacao nibs
1 tsp chia seeds
Blend everything but chia seeds WELL, pour into your glass, then top with chia seeds!
Super good! Its filled with potassium, good fats, protein, greens, antioxidants, and has a little caffeine- perfect way to start a morning or have after a workout 🙂 AND no added sugars/sweetners?! What a win. If its a green tipped banana, I believe it would fall under 21DSD compliant too!
Plus, the blended in cacao nibs remind me of having an oreo shake (far fetched, okay, but still!)
To continue with the theme of lighter fare, I crafted up this COMBO. Yes, yes, there are no measurements in this, but its pretty simple.
Chopped watermelon, avocado, mint, and goat cheese! Its my take on the feta-watermelon salad, but with more good fats (avocado) and a more well received (read-digested) dairy (goat). Just chop, throw in a bowl, and mix!
Its really refreshing and so easy to whip up for guests (or yourself).
FINALLY, I have to share I tried another menu item at JustBe ! I almost always get the FULFILLED burrito because it is so damn good. But yesterday I tried the DESIRED as a wrap. Essentially a paleo chicken caesar wrap in their heavenly grain free tortillas. The sauce was delicious, the chicken tender and juicy, the tortilla warm…. this is my favorite place to go in Denver guys!! My photos could be better, but I don’t think their food could… too perfect!

Also, making the smoothie, the dish, and eating at Just Be don’t require an oven! Why is this great? MY OVEN WILL NOT TURN ON. I REPEAT, OVEN OUT OF ORDER. This is a big issue for someone who loves to cook. Not cool guys. I really hope I can get it fixed soon!
