I am currently sniffling away as I have been living 100 miles an hour lately! Dads 50th in San Diego, OutsideLands Music festival in San Francisco, then back to Denver for a wedding and a concert (City and Colour anyone?-AMAZING) ! My phone also went to heaven, and after a few awkward days, I officially have a new phone. Soo, I’ve been downing oregano oil, probiotics, and trying to do lighter exercise to stay afloat. I also went to Just Be Kitchen, of course, to get some much needed Bone Broth (no picture since I had no phone).
California brought good eats and good fun, though!

Above: I made Ambitious Kitchen’s Maple Peanut Butter Cookies. They are SO easy, GF, DF, and 5 ingredients. I added in Enjoy Life allergen free chocolate chips. They were a big hit in my family and for my boyfriend.
Finally, I was able to try one of my fav blogger Dianne Sanfilippo’s classic spots Soulva! (far left)
I got the pork salad, and some friends & I shared the (actual) award winning fries, cuz AWARD. SUPER yum.

BACK TO DENVER THOUGH.
This week marked my year-anniversary in Denver, AND my final full week as a 22 year old. GUYS I AM FEELING DAMN GOOD ABOUT IT. And I am starting my second year of graduate school this week. WOWZA. So to celebrate and prepare for all of this, I am taking it eassyyyy today. Heck, its 10 am and I am still in bed watching James Corden’s “Crosswalk the Musical“.
What did I have in bed, you ask? Well, some days you want something QUICK, EASY, WARM, and reminiscent of your childhood. That’s why I’ve played around with making a super QUICK, EASY, WARM NO-OAT “oatmeal”. It is made with chia seeds, one small pot, and a few minutes of your time.
Chia NOatMeal Breakfast
2/3 Cups Water
3 tbsp chia seeds
2 tsp coconut butter (coconut manna)
1/2 tsp vanilla extract
1/4 tsp cinnamon
Pinch of sea salt
Add the water, chia seeds, and coconut butter to a pot. Let it start to boil. Add the rest of the ingredients, continuously stirring until the mixture almost becomes the texture you desire- then immediately take off the heat.
Place into a bowl and top with freshly sliced bananas, nut or seed butter, cacao nibs, and coconut flakes. If you have blueberries on hand, I highly suggest adding those too! Collagen powder is another great add in. If you like creamier “oatmeal”s, add more coconut butter or add in coconut milk towards the final stage of boiling!
Guys, this should take about 5 minutes to prepare and finish until it’s ready to ENJOY!
You could even add cocoa powder or honey or maple syrup if you are looking for some extra sweetnassss (haha).
