TIME TO GET CHEESY

Hello hello people who read this!

This weekend was a long-but fun-one. After a week of figuring out a lott for my master’s thesis, it was great to have a fun filled weekend. My best friend (since approximately day one of birth) visited Denver for the first time this weekend! It was great.

I took her to Just Be (duh) where we tired the vegan spinach dip, she had a “complicated order” burrito (which they are awesome about, btw), and I had the DESIRED wrap with added arugula, because I wanted to be difficult and add more greens yo. She was impressed, and so was I…

But that’s nothing new.

My friend has some eating restrictions and so she follows more of a plant based diet & can’t typically have dairy. However, she LOVES cheese. I thought this would be the perfect time to try out making my own dairy free cheese sauce recipe!

I ran to the store to get the ingredients and low and behold, what do I find in the back of my car?!

This. I find THIS. Only me, I tell you.

This worked out perfectly, however, because I was going to buy some anyways for the recipe!

 

 

 

 

While there I also picked up some vegan / soy free jerky to try, on behalf of my friend. Super clean and actually yummy (ha). We snacked as I soaked the cashews in preparation for the recipe.

I was making the recipe, hoping my friend would approve… and she LOVED it. Its the best feeling if you are cooking for someone a on-the-spot recipe!

HERE SHE IS, THE CHEESE SAUCE

I hope you try it out- VEGAN/DAIRY-FREE/SOY-FREE/GLUTEN-FREE cheeeeezzzzyyyyyyy sauce.


PALEO CHEESE SAUCE (makes about 2 cups)

1 cup raw cashews (soak for an hour and a half in 1 cup filtered water)

1/4 cup pumpkin puree

3 small cloves garlic

2/3 cup cauliflower rice (steamed)

3/4 cup coconut milk (lighter- about 18% milkfat)

2 tsp onion powder

3 tbsp nutritional yeast

1/2 tsp sea salt


Soak cashews, then drain. Steam cauliflower rice. Place all ingredients into a food processor, and process until smooth. Throw it on some steamed zoodles, or use it as a dip! My friend and I topped it with some avocado and Picaflor (clean) SirRAWcha.
