Get ya Bone Broth in Broccoli Beef Soup

What a week/end! Good food, company- sleep?! All a girl could want. With my boyfriend/his friends/coworkers in town, we were able to go to a few BOMB.COM spots in Denver.

I already loved RootDown and JustBe…. but I had never tried Quiero Arepas!! They are located in Avanti in LoHi, and are completely gluten free. So I had an arepa filled with munster cheese, smoked salmon, avocado, capers, and their house made sauce (chimchurri?). HOLYYYYY CRAP. I would recommend to all.

This week I also attempted to make a pumpkin bread in my crockpot with no added sugar. Don’t get me wrong… it was delicious (my boyfriend and I ate it all) BUT not exactly a bread as it could never fully cook due to being in a crockpot. More of a pudding bread pie thing. Sad. But hopefully I can try it when I HAVE AN OVEN. Ugh.

I also got a Thrive Market delivery this week… with the special ‘gift’ being BirchBenders Paleo pancakes! They are so easy and tasty.. my boyfriend is obsessed and bought some before he flew home haha!IMG_1288

Finally, as a part of our tradition o’ long distance relationship, we made a delicious meal on Sunday! Salmon (cooked with avocado oil in a pan with a mixture of Balanced Bites MEGA MED & SAVORY spices, pepper, and a dash of cayenne) , cauliflower rice (with salt, pepper, SAVORY spice, paprika), sautéed onions, roasted tomatoes & zucchini, and avocado- with a side of spinach. Holy Moly.

Also, if you were wondering how that art exhibit event thing (?) I went to last Friday was, it was freaking fantastic and so fun! I definitely want to go again- it made for a great date night.

Anyways, enough with my week!! I brewed (haha) up this soup recipe because since I have been SO BUSY… I’ve been getting really concerned with getting sick!

So, I needed some super nutrients & warmth! I used Kettle & Fire chicken bone broth as the base, cuz I’m in grad school, and “slow food” fast is what I’ve gotta do!


GET YA BONE BROTH IN BROCCOLI BEEF SOUP (makes several servings)

16.2 fl oz Kettle & Fire chicken bone broth (one carton)

3/4 cup pumpkin puree

16.2 dl oz bone broth

1/2 cup onion chopped

1.5 cups chopped broccoli

1/2 cup water

3/4 cup coconut milk

1/2 cup + 1 tsp nutritional yeast

1/2 tsp pepper

1/2 tsp paprika

1 tsp garlic

1/4 tsp onion powder

1/2 lb ground beef


Put all into a crock pot, and cook until beef is done! This took me about 4 hours on high.
