Gooey no-bake apple pie bites

HAPPY MONDAY! The countdown to Thanksgiving really is on. Heck, I still need to go to the grocery store to get what I’m planning on bringing! I know I’m making my Jalapeño Cranberry Sauce, but I haven’t decided on the next thing.

I am writing this Sunday night, and boy am I tired! I woke up early this morning, missed the train to the airport by a minute, was the last one to board my flight (they called my name as I was walking up), and flew home to San Diego!

And as usual, it was gorgeous out today. Straight from the airport my Mom and I met my Dad, and grandma at Goodonya Organic Cafe, which is probably my favorite place to eat in San Diego. Good people & food- and all types of food belief friendly! I got the fried egg sandwich (which is open faced) on BRDSRSLY gluten free sourdough, with smashed avocado, cheese, a fried egg, EVOO, tomatoes, spinach, & sausage- with a class of kombucha too. YUMMY!

Afterwards, we walked around a street fair (where I ran into one of my best friends!!), and finally my Mom and I ran to go get a cookie!

Later my Mom & I went to Hot Yoga at Yoga Tropics in Encinitas, where she currently practices, and I have practiced (when home!!) since I was 16. Man oh man did that feel good. After dinner, my sweet tooth was still raging, and I happily obliged ( I used to love chocolate + saltines… this combo is just. as. good).


These bars are added sugar/refined sugar freeeeeee, which means you get a treat that tastes good, and has nothing for you to worry about! Can I get a heck ya?!

These are good alone or atop some good ‘ol vanilla ice cream. Leftovers? Great for a quick snack in the morning, before a workout (or Turkey trot) or as an energy boost while cooking the rest of your goods!

NO BAKE GOOEY APPLE PIE BITES (makes 12 lil bites)

1/2 cup dates (I counted 12)

1/3 cup & 1 tbsp apple sauce (make sure only ingredient is apples***)

3 tbsp sunbutter

1 cup shredded coconut

1.5 tbsp cinnamon

1/2 tsp vanilla

Place all ingredients into a food processor, process well. Then place on parchment paper in the freezer to set overnight!
