Chocolate Banana Bread for One

Happy Tuesday! I hope you are having a great day- despite it being the end of the work quarter for some, holiday shopping madness for others, or end of semester (like me!) It’s a bit crazy.

It is finally December, so holiday lights, Christmas music, and ridiculous sweaters are now to be fully embraced! However, I am still waiting for a good snow in Denver…

This past weekend I was in San Francisco for my boyfriend’s work party. It was a weekend filled with good friends, food, and fun. But I am glad to be at home, although it means having to really buckle down on work. Hence why this blog is short & sweet!

If you’re feeling stressed (like me) and in need of something warm or baked, this easy recipe is ¬†for you! Perfect for breakfast or a treat- its not too sweet so it falls perfectly in between!

As per usual, it is grain free, gluten free, dairy free, and has no added sugar. But don’t fret, my 16 year old brother approved!


SINGLE SERVE CHOCOLATE BANANA BREAD

1 egg

1/2 banana

1/4 tsp vanilla

1 tsp coconut milk

3 tsp cocoa powder

2 tsp coconut flour

Pinch baking soda

1/4 tsp cinnamon

Pinch sea salt

Coconut oil, butter, or ghee for greasing

*OPTIONAL* 1 tbsp enjoy life chocolate chips


Mash banana. Add egg, mix well. Incorporate the rest of the ingredients. Mix well. Grease small ramekin (I used coconut oil). Place batter in ramekin. Bake at 400 for 35 minutes (I did this in a toaster oven). Let cool before enjoying!!
