Crunchy Chocolate (Dairy Free)

Happy December 12! Almost half way through December… how… what?! This is problematic because:

1. I have multiple things due for my graduate program this week

2. I have done VERY LITTLE Christmas shopping

3. I refuse to believe it’s already 2018. Like whaattttt.

This weekend/week has been BUSY. Again, lots of school work, extra holiday cheer (and a few extra drinks & treats), and a lack of sleep are keeping me on my toes. I’m hoping my immune system can hang on just a little longer, but just in case, you’ll find me guzzling bone broth, tea, and oregano oil (even though I think it is the devil incarnated, so gross).

What do you do when the store doesn’t have the chocolate you want? Buy another brand, of course….. is what most people would  say. But in the wake of my attachment to sugar around the holidays, I REALLY wanted Eating Evolved’s midnight dark chocolate- no dairy, no sugar, just dark chocolate goodness.

So I made my own non-sweet chocolate. Its crunchy, slightly creamy, and completely sugar free! Of course, if you are different than me, I’m sure you could sprinkle in some honey, maple syrup, or coconut sugar. But not this girl!

This has been great as an afternoon snack, pre-workout snack, crumbled on ice cream, or eaten alongside a handful of nuts or a spoonful of nut butter!

CRUNCHY CHOCOLATE (DAIRY FREE) makes roughly a 8×8 sheet 

1/2 cup cocoa butter

2 tbsp coconut oil

2.5 tbsp cocoa powder (unsweetened)

3 pinches sea salt

3/4 tsp vanilla extract

3 tbsp coconut cream

1 tsp cinnamon

3 tsp cacao nibs

1 tbsp coconut flakes

Combine softened or melted cocoa butter and coconut oil in a bowl.

Add coconut cream. Add cocoa powder, salt, coconut cream, vanilla and cinnamon. Mix well.

Let mixture ‘harden’ slightly (can place in fridge or freezer for 5-8 minutes).

Stir. Add in caco nibs and coconut flakes.

Spread on parchment paper, let sit in fridge for 30-40 minutes…. enjoy!

Ps. MINI RANT, if you care to listen (haha):

It really bugs me when people freak out about what I post on social media regarding food. I DON’T POST EVERYTHING I EAT. No, you’re not seeing every glass of wine, gluten-filled beer *GASP*, or piece of chocolate I decide to eat. I mean COME ON people, who is crazy enough to post everything they eat? How would they enjoy anything?? So please don’t think that everything that everyone posts is everything. That is just some reallll craziness.

FYI I went to a free Corepower yoga class at my favorite brewery this weekend and it was RAD. And then I had a BEER. Sue me. 😉
