MERRY CHRISTMAS EVE to all of you who celebrate, and happy Sunday for those who don’t! Either way, I bet you love cookies.
I made an easy gingersnap recipe you can make just in case your low on cookies for Santa and need a last minute batch! These are especially good for gluten free, grain free, dairy free, & refined sugar free Santas 😉
Chewy, light, and subtly sweet!
CHEWY ALMOND GINGERSNAPS (makes 17)
1 cup justins almond butter
1/3 cup & 1 tbsp maple syrup
1/4 tsp vanilla
1/4 tsp salt
1/2 tsp baking soda
3 tbsp + 1 tsp coconut flour
4 tsp ginger powder
Mix wet ingredients until well incorporated (this takes some elbow grease!). Add dry ingredients. Let mixture sit for 5 minutes, or place in the fridge for 5 minutes. Line baking sheet with parchment paper. Roll balls of dough, place on baking sheet. Finally, flatten cookies with the back of a fork.
Bake at 350 for 17 minutes, makes about 17 cookies.

BLOG UPDATE POST CHRISTMAS:
I hope you all had a Merry Christmas! Since I already posted a recipe (early this week) I am just updating my blog for the week, no new recipe- sorry! The holidays are busy man.
For Christmas Eve dinner, my mom and I made Fed & Fit’s tamale pie! We altered it a little, adding in some olives, onion powder, & green chillies. It was DELISH! Washed it down with some no-sugar-addded red wine of course.
Note: this all happened in ONESIES… my mom bought us all one. Mine was a Christmas tree but my brother Carter one-upped it with a a gift of a Dinosaur onesie, which I stayed in.
Afterwards, charades & an early bedtime were much needed.
Then Christmas morning, we had coconut milk/honey hot chocolate (which I used as a coffee creamer hehe), with pasture raised eggs, bacon, spinach, guacamole, grain free banana blueberry muffins, salsa… and LOTS of butter 😉
All in all it was a Merry Merry day! Opted for two helpings of a dairy free ice cream sundae instead of wine, because I should probably give my liver a rest day…. Holidays, home, family, friends, and being 23 isn’t super helpful nor healthful… but its fun!
As for some food-related gifts I got an immersion blender and some chocolate molds to help with projects moving forward, yippee!!
It was nice this morning to sleep in, however, and get a good sweat with my Momma at our favorite hot yoga studio. It was especially tough since I ran for 15 minutes yesterday and am SORE. Shows you how often I run O.o haha.. not my favorite way to stay active.
