Coconut Chocolate Collagen Crunch Balls

HELLO PEOPLE OF EARTH!

Happy Tuesday. Can you believe we are already towards the end of March??? I honestly can barely comprehend it.

After fighting a serious cold last week, I am finally feeling better!!

Last week as a part of a sick day pick me up I headed to Vital Root for a much needed SporTea…. and then I got a gluten free ginger cookie. Ginger is great for colds, right? And this applies to all forms? No? Whatever it was for the soulllll.

This past week I had my brother and his flatmate visit Denver in celebration of his 21st. Of course we went to Just Be Kitchen because it is also my brother’s favorite restaurant in Denver.

There is a place in Denver called ‘HABIT’ doughnuts- it is a ‘doughnut dispensary’- they call their products ‘dope doughnuts’ and have themed their shop to resemble a Marijuana dispensary. But it’s just doughnuts… with the option of BOOZE. So I called to see if they could do gluten free doughnuts. They can. So I had to take my brother to go try a boozy GF doughnut! Plus it was an “only in America” thing that his British roommate had to experience.

Later this weekend my brother left and my boyfriend came into town! It was a great weekend. We did some good ‘ol St. Patricks day celebrating (which I amazingly kept gluten free) with some friends around Denver, did a lot of work, AND saw HAMILTON!!!! Holy smokes, folks. It was amazing. Shoutout to the best boyfriend ever for bringing me as his date. Goodness gracious.

The following recipe I really really am into because they aren’t sweet, but are chocolatey & crunchy. A great pre-workout snack!! Benefits? Good fats, protein, magnesium, & chocolate! A little boost in energy before you go do whatever you do for a sweat sesh.  And I’ve actually been craving these too… you can obviously eat them whenever, I’m guilty 😉

These are CRAVE-ABLE, PEOPLE!! I hope you enjoy these no-bake treats!


Coconut Chocolate Collagen Crunch Balls                    

(need a food processor, parchment paper; makes 15 balls)

2 dates

1/4 cup raw cashews 

1/2 tbsp coconut butter

1 cup shredded coconut (trader joes)

About 1/4 cup cacao butter

3/4 tsp sea salt

6 tbsp collagen

1 tbsp coconut oil

1 tbsp tahini butter

2.5 tbsp cocoa powder

2 tbsp cacao nibs

2 tbsp chia seeds


Soak dates. Then place everything into a food processor- except the chia seeds and collagen. Process until well combined. Add the collagen, process. Finally, mix in the chia seeds or briefly pulse in. Set mixture in fridge for a few minutes to firm up. Using a tablespoon, measure out the mixture and roll into balls. Place onto parchment paper and freeze!

They should be set after about an 1.5-2 hours.

And then have a selfie photoshoot with your creations in your apartment… because that is normal. Whatever. You now have Coconut Chocolate Collagen Crunch Balls, so does anything else matter?
