Happy Tuesday. How was your Easter? How was the beginning of Passover? How was your weekend??
I hope the answer is splendid!
Mine was great! I saw the Eli Young Band with some friends, caught up on some work, celebrated life with friends & learned to roll sushi, and had Easter Brunch with some lady friends! For brunch we went to GOZO off Broadway. It was so good! I got the shaved brussel sprout salad (has egg, almond) and then a side of potatoes, because I needed them. Mimosas may have also been involved. (Holidays, sorry??)
I also made my Holy CREPE! recipe.
Filled with COYO coconut milk yogurt, strawberries, cinnamon, & sunbutter… topped with dairy free 100% eating evolved chocolate! I mean… 😉
If you know me, you know I am such a low stress person.
HA! That was clearly sarcastic, if you do know me. My Masters thesis defense is in LESS THAN A WEEK, so, you can say I’ve been SUPER ZEN. So it was wonderful to have a truly great weekend, in the midst of my stressing. I woke up Thursday with some upper back pain (happens when I am stressed), but it went away. THENN, the Easter bunny brought me a back spasm. So that was a bummer. But I rolled it out, and worked it out. It all ended up okay.
Earlier in the week (sorry to not be linear here…), I checked out the opening of Just Be Kitchen’s DINNER SERVICE!! They rocked it!! I got the new kale salad with chicken, and my friend got the chicken biscuit sandwich. DUDE. They were both so good, but I need to go back for my own chicken sandwich! (FYI Just Be Kitchen is a great space for wellness in Denver, with allergen friendly, delicious food. & it is 100% GRAIN AND GLUTEN FREE!)
This week Karen from Primal by Karen stopped by to drop off a beauty counter giveaway! We were able to talk for a while, and she is so cool! Her and her husband work together to combine nutrition + chiropractic services to address overall wellness. I just love it; wellness is not one-sided. I also tried Vital Root (100% gluten free and super trendy). My girlfriend and I went there to eat breakfast and work. It was really good!! She got the pancakes, and I got the avocado toast. I will be back…

Well back to this recipe. I call it a ‘bread’, but I really don’t know what to call it. Its not necessarily a bread… but its not a toast since it is soft… but sturdy (TOP-ABLE!)… its baked….. but flat…. WHATEVER IM CALLING IT ‘BREAD’.
This recipe is good sweet or savory. Personally, I am leaning towards the savory… I topped the avocado-savory side with salsa.. it rocked.
This is SO EASY, SO QUICK, and SO SIMPLE! It is meant to be topped. Honestly, it would be great to pack when traveling with some nut butter & a banana!
COCONUT BREAKFAST ‘BREAD’
1/2 cup shredded coconut, unsweetened
2 tbsp tahini
1 egg
1 tbsp water
Pinch salt
(cinnamon or everything but the bagel seasoning; optional)
Mix all ingredients in a bowl. Spread thinly on parchment paper, sprinkle either cinnamon or everything but the bagel seasoning. Bake at 400 for 10 minutes.
I used the Tahini Butter and coconut flakes from trader joes. 🙂
ENJOY! (I did half & half)
Topped here with avocado, or tahini butter & banana!
