5 Minute Banana Chip Upgrade


This past week was crazayyy. I TURNED IN MY THESIS. I never have to touch it AGAIN. AHHHH. So exciting. I also had my boyfriend in town all week. I had friends in town this weekend. So I spent a lot of time celebrating… eating out… and drinking some drinks. My body is needing some rest, man! But all in all, still not too bad. I went to Postinos Wine Cafe on Tuesday and got their gluten free toast bruschetta board…. holy smokes, it is GOOD. I also tried the burger (lettuce wrapped, with house made ketchup– no high fructose corn syrup) from American Grind. And finally, I had brunch at The Corner Office this Sunday. I got the classic benedict which they so kindly (and without problem) put on top of tomatoes and spinach instead of bread! It was delish!!

OH and I can’t forget to wish Just Be Kitchen the happiest of first birthdays!! Just Be Kitchen is my happy place in Denver for like-minded individuals. Heck, I went last Wednesday to work for a bit and ran into Whitney (Rooted in Healing= Instagram name). She is so cool! I love how honest and badass she is! It was nice to finally meet her. And she was meeting up with another awesome lady Bendsandbites (Instagram name). They were still enjoying their food/talking when I got up to leave…. & OF COURSE: my computer cord was wrapped around my chair and during my attempt to untangle it, I fall on my butt, while tipping the chair over in the middle of Just Be Kitchen… right in front of these cool ladies. It was hilarious, honestly, and that is just my life!! They were understanding and laughed with (at? 😉 ) me. Haha they were so sweet about it!

But of course of all times to cluz-it-up?!! So so funny. Classic Alexis. *insert face palm*


Here is an easy peasy banana chip UPGRADE. I bought some ordinary banana chips from the store (only $1.50!), bananas + coconut oil only. Butttt they were pretty dull. Not super crunchy, but I wasn’t too bummed because they came in bulk & so cheap! But then it came to me– I could just upgrade ’em! Enjoy this five-minute banana chip upgrade– turn dull, affordable banana chips into some expensive tasting munchies!


Parchment paper

1 cup store bulk banana chips (coconut oil & bananas only)

1 tbsp avocado oil (I always & only use Primal Kitchen’s)

1/4 tsp apple cider vinegar

1 tbsp nutritional yeast

1/4 tsp onion powder

1/8 tsp sea salt

1/8 tsp cayenne pepper

Preheat oven to 350 degrees. Add banana chips, apple cider vinegar, and oil in a bowl. Mix well with your hands, coating the chips. Add the seasonings. Spread chips out on parchment paper, and bake for 4 minutes. Let cool, and BOOM. SNACK TIME!

And then you live happily ever after…. or eat everything you just made… 😉

Double the batch and they would be perfect as bar snacks when entertaining!
