Morning Glow Paleo Waffles

HELLO, IT’S ME!

Did you miss me? I missed me. And by me, I mean the gal who shared new recipes! I have been super duper busy with daily life: my job, my family, my friends… but I finally found a minute!

Essentially I woke up one day wanting to make waffles, then thought about it for several days. I then proceeded to hear the word “waffle” more in one day than I’d ever heard in my whole life… so I knew it was time. So in true Donkey-from-Shrek fashion, I said “In the morning, I’m making waffles!”

It is getting colder, which makes me want to stay in an make Sunday brunch even more! A hot drink, fun socks, cozy sweats + waffles? I’m not sure it can be beat!

I named these morning glow paleo waffles because these waffles are packed with protein from the eggs and collagen, with good fiber from the coconut flour– much better for your morning glow than traditional waffles (collagen+protein support skin elasticity+hair+nails!).

Now there are a lot of gluten free waffles on the internet these days. Heck, there are now a good amount of grain-free waffles on the internet! However, most of these waffles are made from almond flour. Now if you know me, you know that when I went gluten free + grain free just over 6 years ago… I turned to almonds. Almonds, almond meal/flour, almond butter… I would bake and cook with it… there were NO pre-made paleo any things back then. We had to do more “hunting” and “gathering” than today’s modern grain free foodie! But I digress. I ate so many freakin almonds, that my body eventually said no. NO MORE ALMONDS. As my knowledge grew, it made more and more sense– nuts are filled with toxins that are meant to deter predators (aka MUAH). Over the time that humans have ingested nuts, we have learned to soak then roast / grind nuts up to leach out these toxins (thats why soaking / sprouting nuts has recently come back into vogue with the health movement). Long story short, I have cut almonds out of my diet 98% of the time. These paleo waffles were to be almond-less.

So what the heck are in these babies? I’ll tell you.

Morning Glow Paleo Waffles

  • 1/2 cup coconut flour
  • 1/4 cup cassava flour (I used Otto’s)
  • 1/4 tsp baking soda
  • Pinch of salt
  • 3 tbsp collagen
  • 1/2 tsp cinnamon
  • 1 tbsp grassfed salted butter
  • 3 eggs (small)
  • 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 1 tbsp coconut nectar (or maple syrup)
  • 1/2 cup water

First, melt the butter (I place it on a warm skillet– not hot so it doesn’t burn). Next, place all dry ingredients (coconut flour, cassava flour, baking soda, salt, collagen, cinnamon) into a bowl.

In a separate medium bowl, add the 3 eggs, and whisk together. Next add the coconut milk, water, and vanilla to the eggs. Next add the coconut nectar.

Slowly mix the bowl of flours into the wet mixture. Make sure it is well incorporated, then get out your waffle iron! Grease the iron (I suggest butter or coconut oil) then place the batter in the iron until ready, about 2 minutes. Repeat until you have 5 delicious waffles!

Top with whatever you want, and enjoy! My suggestions: bananas, honey, nut butter, + cacao nibs. Applesauce + cinnamon. Chocolate chips + cacao nibs+ raspberries. Coconut flakes + honey + butter. Coconut butter + apples+cinnamon.
